With the availability of engine swaps and suspension parts these days, you can really do whatever you want with one of these.
Option 1. Rallymino ^
Diesel swap. Small Lift. All Terrain Tires.
Perfect for ski, or hunting trips.
Option 2. Dorriftomino.
LS Swap. Coilovers. Square stance tires.
Track Day Bro.
What would you do if you inherited an El Camino?

It would just be an El Camino.

I’d like to have an Elky of the mid-to-late 70s, since they apparently share a sturdy frames with either a truck or a full-sized Chevy sedan/wagon. They still look sporty and mucho-y enough to rock restored or as a patina’d tow pig...which is what mine would probably end up being.

I’d keep it stock and clean. It is perfect as is. A car AND a truck at the same time!? Genius.

I want this, But those wheels have to go.
Give it rally wheels, and dump those racing seats.

Things that cannot go in the Miata would get transported: tubas, baritones, xylos/vibes/marimbas, stand racks, bari saxes, timpani...and I wouldn’t have to drive a truck or SUV like every other band director. (It’s a good thing my old man has a Ranger he rarely needs. He leaves it with me for that very reason.)
There are very few good options for band directors who love RWD cars/hate trucks and SUVs. Pretty much limited to:
El Camino/Ranchero
Pre-2000 Volvo wagon (percussion equipment still won’t fit in a Panther trunk)
Panther with a trailer hitch (same)
Lexus LS400 with a trailer hitch (same)
Just about everything else has a trunk too small. El Camino solves everything, assuming it’s as reliable as the Volvo, panther, or Lexus. It’s the only car option without needing a trailer hitch and flatbed.

I’d build a 1970 El Camino as a 1980’s high-school drag car. Skinny centerline mags up front, fat white letter tires out pack on mis-matched torq thrusts and shackled up rear leafs. Fenderwell headers dumping out just behind the doors and a wicked cammed idle. Yeah. That’s the dream.

U2 chase cars

My pops used to do that occasionally at Beale AFB in California and at Osan AFB in South Korea around the late 80s/early 90s when he was a crew chief working on U2s. Back then they were using police-packaged Mustangs, if I remember the story right, the base commander or one of the higher-ups at Osan crashed their only Mustang chase car while stretching the V8’s legs out on the runway.

Stroke out a 350 or just go for a SB 396, modern 5- or 6- speed, perfect cruiser which can also be your parts hauler.
